Equipment

  • 1 Non-stick skillet For cooking the eggs
  • 1 Knife For slicing avocado

Ingredients
  

  • 2 large Eggs Beaten
  • 1 medium Avocado Sliced
  • 4 slices Turkey Preferably oven-roasted
  • 2 Whole wheat tortillas
  • to taste Salt and pepper
  • as needed Hot sauce or salsa Optional

Instructions
 

  • Heat a non-stick skillet over medium heat. Add the beaten eggs and scramble until fully cooked. Season with salt and pepper.
  • Warm the tortillas in a microwave for about 15-20 seconds or until they are soft and pliable.
  • Lay a tortilla flat and add half of the scrambled eggs, two slices of turkey, and half of the sliced avocado.
  • If using, drizzle your choice of hot sauce or salsa over the fillings.
  • Carefully roll the tortilla to wrap the fillings. Repeat with the remaining ingredients to make the second wrap.
  • Serve immediately for best taste and texture.

Notes

For a lower carb option, consider using a low-carb tortilla or wrapping the ingredients in lettuce leaves.
