  • 10 quail eggs
  • 150 g oat flour or ground oatmeal
  • 1 tsp honey
  • 250 ml almond milk
  • 25 ml coconut oil
  • 150 g blueberries
  • ½ tsp lemon zest dried
  • ½ tsp cinnamon powder
  • a pinch of salt
  • ½ tsp baking powder
  • ¼ tsp baking soda

  • Start by processing the oats in a blender or a food processor until they look like flour or use oat flour if you can find it. Then, grab a medium-sized bowl and empty the oatmeal flour into it. Add the other dry ingredients and mix together well.
  • Next, take another medium-sized bowl and whisk together the quail eggs, honey, almond milk and, coconut oil. Basically, you start by mixing the dry and wet ingredients separately.
  • After the wet ingredients are mixed properly, add them to the dry ingredients and, using a whisk, mix until you obtain a batter.
  • Heat 1 tablespoon of coconut oil in a pan over medium heat. Add a large spoonful of batter onto it and add some fresh blueberries. Fry the pancake until bubbles form and the edges dry. This should take about 3-4 minutes. Flip it over and cook until browned on the other side. This should take another 2-3 minutes.
  • After you're finished cooking Kim Kardashian's blueberry oat flour pancakes, serve on a plate. You can decorate them with some extra blueberries and add maple syrup on top.
