Equipment

  • 1 Non-stick skillet For cooking the egg and grilling the sandwich
  • 1 Spatula For flipping the sandwich

Ingredients
  

  • 2 slices Bread Preferably sourdough or whole grain
  • 1 tbsp Pesto sauce
  • 1 Egg
  • 2 slices Cheese Cheddar or mozzarella recommended
  • 1 tbsp Butter For grilling the sandwich

Instructions
 

  • Spread pesto sauce on one side of each bread slice.
  • Heat a non-stick skillet over medium heat and melt half the butter.
  • Crack the egg into the skillet, season with salt and pepper to taste, and cook to your preferred doneness.
  • Place the cooked egg on the pesto-covered side of one bread slice. Top with cheese slices and cover with the other bread slice, pesto side down.
  • Add the remaining butter to the skillet. Once melted, place the sandwich in the skillet.
  • Grill until the bread is golden brown and the cheese has melted, about 2-3 minutes on each side.
  • Remove from heat, let it rest for a minute, then cut and serve warm.

Notes

For a lighter version, use a low-fat cheese and whole grain bread. You can also add spinach or tomato slices to the sandwich for an extra layer of flavor and nutrition.
